Lemon Herb Marinated Salmon & Potatoes

Ingredients
- 170 g salmon fillet
- 180 g baby potatoes, halved
- 80 g broccoli
- 50 g asparagus
- 1 tsp olive oil
- 1 garlic clove, minced
- Juice of ½ lemon
- 1 tsp chopped fresh parsley
- 1 tsp chopped fresh dill
- Salt
- Black pepper
- Lemon wedges (for serving)
Preparation
- 1Preheat the oven to 200°C (400°F).
- 2Toss the baby potatoes with olive oil, salt, and pepper. Roast for 18–20 minutes, turning halfway through.
- 3Season the salmon with salt and black pepper.
- 4Heat a non-stick pan over medium-high heat.
- 5Sear the salmon skin-side down for 4–5 minutes, then flip and cook for another 2–3 minutes.
- 6Steam the broccoli and asparagus until just tender.
- 7Mix the garlic, lemon juice, parsley, and dill to make a light dressing.
- 8Arrange the potatoes and vegetables in a bowl.
- 9Place the salmon on top.
- 10Spoon the lemon herb dressing over the salmon and serve with fresh lemon wedges.
