Ingredients
- 80 g oat flour
- 250 g egg whites
- 1 scoop (30 g) vanilla whey protein
- 80 g fresh blueberries
- 1 tsp baking powder
- ½ tsp vanilla extract
- Pinch of cinnamon
- Non-stick cooking spray
- Optional Toppings
- Greek yogurt
- Fresh blueberries
- Sugar-free maple syrup
- Peanut butter
Preparation
- 1Blend the oat flour, egg whites, whey protein, baking powder, vanilla, and cinnamon until smooth.
- 2Fold the blueberries gently into the batter.
- 3Heat a non-stick pan over medium heat and lightly coat it with cooking spray.
- 4Pour small portions of batter into the pan.
- 5Cook for 2–3 minutes until bubbles appear on the surface.
- 6Flip carefully and cook for another 1–2 minutes until golden.
- 7Stack the pancakes on a plate.
- 8Top with Greek yogurt, fresh blueberries, and sugar-free maple syrup if desired.
- 9Serve immediately.
