Ingredients
- 150 g lean steak (sirloin or rump)
- 200 g sweet potato, diced
- 1 tsp olive oil
- 80 g broccoli
- 50 g cherry tomatoes
- 30 g baby spinach
- 1 garlic clove, minced
- Juice of ½ lemon
- 1 tsp chopped fresh parsley
- Salt & black pepper
Preparation
- 1Preheat the oven to 200°C (400°F).
- 2Toss the diced sweet potatoes with olive oil, salt, and pepper, then roast for 20–25 minutes, turning halfway through.
- 3Season the steak generously with salt and pepper.
- 4Grill or pan-sear over high heat for 3–4 minutes per side (medium), adjusting to your preferred doneness.
- 5Steam or boil the broccoli until just tender, about 4–5 minutes.
- 6Mix the garlic, lemon juice, parsley, and a pinch of black pepper to create a simple dressing.
- 7Slice the rested steak against the grain.
- 8Arrange the roasted sweet potatoes, broccoli, spinach, and cherry tomatoes in a bowl.
- 9Add the sliced steak on top.
- 10Drizzle with the garlic herb dressing and serve immediately.
